Beetroot is one of those versatile vegetable – it can be used in salads, smoothies or as a snack on its own. Today we’re using it in a smoothie. Why beetroot?
Well,
- beetroot is highly nutritious and packed with essential vitamins and minerals
- beetroot is rich in folate (vitamin b9 and folacin), a vitamin that is important in the red blood cell formation and for healthy call growth + function. All B vitamins help the body convert carbs into fuel which is used by the body for energy.
- beetroot increases exercise performance
- beetroot is rich in potassium (aids in lowering blood pressure), iron (necessary for the transportation of oxygen in red blood cells) and vitamin c (an antioxidant vital for immune function and skin health)
Ingredients:
- ice cubes
- frozen beetroot (cooked) (1/2 cup)
- plain yoghurt (1/2 cup)
- milk (1 cup)
- blueberries (2 tablespoons)
- Optional – honey if you prefer to have it sweet.
